Induction polished steel paella pan
The polished steel or iron paella is the most traditional paella and the one most frequently used in hospitality. It offers greater resistance thanks to its magnificent thickness, which prevents deformation of the paella due to high intensity heat.
It requires minimal maintenance: after cleaning it with water and detergent, it should be coated with oil inside and out to prevent rust. It is advisable to store it in a protected, dry place and in its case.
The measurements refer to the top of the paella. The base measurements are:
- Paella 34 cm → 28 cm base diameter.
- Paella 42 cm → 37 cm base diameter.

Very good paella, it doesn't deform, you have to control the heat well and know how to handle it, cleaning and drying afterwards is very important
I followed the instructions to the letter and it stuck excessively, and after washing it (also following instructions) it's only "okay," leaving me both wanting and dreading using it again for fear that the food will stick again.
