In a paella it is essential to “dry the rice”, that is, evaporate all the broth during the cooking time of the rice. And the “Arrozcontrol” paella pipette helps those who are clueless or new to making paellas achieve this.

Its use is very simple: if at minute 9 the rice does not appear, we extract the excess broth with the pipette by simply squeezing and releasing the bulb (thanks to its filter, only the broth is extracted). This way we will ensure a paella with the perfect point of the rice and obtaining the precious socarrat.

I've always used a ladle to remove excess broth. But this is a good and more efficient solution.
