El caldo de buey a leña de El Paeller es mucho más que un caldo: es un homenaje a la cocina tradicional. Nace de nuestro compromiso con la calidad y la cercanía, en colaboración con Carnicería Catalá, un proyecto familiar que comparte nuestra pasión por la materia prima excepcional.
Cocinado lentamente al fuego de leña, este caldo combina el intenso sabor de la carne de buey con un sofrito de verduras frescas y nuestro particular toque a leña que lo hace único. Un proceso artesanal que combina la tradición y el saber hacer de la familia Catalá y la familia Margós.
Ya sea para preparar guisos, estofados o como base para tus recetas más elaboradas, este caldo hecho con producto nacional es tu mejor aliado en la cocina.
¿Qué lo hace diferente?
1. Cocción a fuego de leña
Cada lote de nuestro caldo se cocina lentamente al calor del fuego de leña, lo que intensifica los sabores y aporta ese toque ahumado que lo distingue de cualquier otro.
2. Sabor profundo y equilibrado
El buey, las verduras frescas y el tiempo son los ingredientes principales de esta receta. No añadimos conservantes ni aditivos: todo el sabor proviene de ingredientes naturales y una cocción cuidada.
3. Ideal para recetas tradicionales
Es la base perfecta para guisos intensos, arroces melosos y platos que requieren un caldo robusto y lleno de matices.
Water, beef bones (13.3%), salmorreta (crushed tomato (tomato and acidulant: citric acid), dried garlic, sweet paprika), carrot (2%), onion (2%), leek (2%), beef fat (1%), salt.

How to use broth correctly in rice dishes?
Here's a recipe that goes perfectly with the wood-fired beef broth, created by Rafa Margós. First, sear a beef steak in the paella pan and set it aside. Then, sauté the ingredients. You can choose, for example, your favorite vegetables, such as snow peas, and a selection of mushrooms. Then, add sofrito to deglaze the paella. Add the broth and bring it to a boil. Taste the broth and adjust the salt. Remember that our broths already include salt, but we suggest adjusting it to your taste. Then, add the rice, and in the last few minutes of cooking, chop the steak you had set aside and spread it over the surface of the paella pan. Savor your recipe with the intense flavor of beef and wood.
