We present the Fideuá from El Paeller. A traditional Valencian dish, generally fish and shellfish, which substitutes rice for thin noodles. Of course, it is made over firewood and in paella. They say that the fideuá has its origin at the beginning of the 20th century in the port of Grao de Gandía, from where the trawlers set sail every morning to fish.
On one occasion when they were preparing to make a seafood paella on the high seas, after making the stir-fry in the traditional way, they realized that there was no rice left, so they decided to use some thin noodles instead and let it dry as if it was rice. The recipe was a success and spread throughout the territory, becoming a very popular dish that became part of the paellera tradition. A dish that could not be missing from El Paeller's recipes.
