What dishes can I prepare with seafood fumet?
Our seafood fumet is incredibly versatile and can be used in multiple recipes besides the traditional fideuá:
Seafood Paella – The essential base for a rice dish full of seafood flavor.
Brothy or creamy rice – Perfect for enhancing fish and seafood stews.
Suquets and casseroles – Add depth to traditional dishes like suquet de peix.
Soups and creams – From fish soup to seafood cream.
What is the difference between a wood-fired seafood stock and other industrial broths?
The difference is huge. While industrial broths often rely on artificial extracts and enhancers, at El Paeller we follow the traditional recipe:
🔸 We cook over a wood fire, which enhances the aromas and gives that unique smoky touch.
🔸 We use fresh ingredients, without concentrates or added chemicals. For example: shrimp, salmorreta (crushed tomatoes, tomato, and acidulant: citric acid), dried garlic, sweet paprika, crab, EVOO, shrimp head/shrimp, and salt.
🔸 We respect the cooking times, achieving a broth with depth and real flavor.
Our seafood fumet is the perfect choice for those seeking authenticity in their dishes.
What is the difference between our glass seafood stock and our canned seafood broth?
The main difference lies in the ingredients. Our wood-fired seafood stock in glass contains shrimp, crab, and prawn head. It has a stronger seafood flavor, making it ideal for more intense flavors. On the other hand, our canned seafood stock includes, in addition to shrimp, crab, and shrimp head/shrimp, a portion of whitebait and a combination of onion, leek, and carrot. This addition of vegetables softens the power of the seafood and offers a more balanced flavor.
Where do the ingredients come from?
At El Paeller, we focus on local produce. Therefore, the seafood we use to make our broths comes from the Mediterranean, respecting natural cycles and guaranteeing quality and sustainability in every can.
